Haldiram’s- Peanut Gajjak (400gm)
Description
Peanut gajjak is a traditional Indian sweet made by cooking peanuts in jaggery syrup. It originates from the Indian states of Rajasthan, Uttar Pradesh and Bihar.
To make peanut gajjak, raw peanuts are roasted lightly and the skins are removed. Jaggery and water are combined to form a syrup which is cooked until it reaches the hard-crack stage. At this point, the roasted peanuts are added and cooked while stirring continuously. The mixture begins to thicken and bind together. Towards the end, small quantities of ghee are added.
The mixture is then spread on a flat greased surface and pressed into a slab using a roller pin. While still warm, the slab is cut into small diamond shapes. As it cools completely, the gajjak becomes crunchy and brittle.
