originated in the Indian state of Rajasthan.To make it, full cream milk is slowly cooked and reduced until it becomes a solid yet soft and crumbly texture. Sugar and condensed milk are added for sweetness. Milk cake has a distinct milky taste and grainy texture from the milk solids. It simply melts in the mouth. Chopped nuts like pistachios, almonds and cashews are often mixed in for crunch and flavor. Cardamom or saffron may be added too. The cake is spread in a pan and cut into squares, rectangles or diamond shapes when semi-soft. It is decorated with silver or gold food foil. Milk cake comes in white, pale yellow and brown variations. It has a long shelf life and is widely available in cake form or as barfi pieces.
