Haldiram’s – Gur Rewari (400gm)
Description
Gur rewari is a sweet Indian dessert made from jaggery (unrefined cane sugar) and whole wheat flour. It has a fudge-like texture and is often flavored with cardamom. Gur rewari is circular in shape and has a cracked appearance on the surface.
Traditionally, gur rewari is made by cooking the jaggery until it reaches the hard-crack stage, adding ghee and cooking it further. The jaggery mixture is then poured onto a plate and allowed to cool and harden. It is broken into pieces and ground into a powder. This powder is mixed with whole wheat flour, ghee and cardamom powder to form a dough. Small lime-sized balls are made from the dough and flattened between palms to form the circular shape. These are fried in ghee until browned and cracked.
