Description
Gur khasta gajjak is a crunchy Indian sweet made from jaggery and whole wheat flour. It originates from the state of Punjab in India.
To make gur khasta gajjak, jaggery is heated until it becomes frothy and starts thickening. At this stage, small cubes of chilled ghee or white butter are added. Once the jaggery reaches the hard-crack stage, it is poured onto a thick greased plate.
The jaggery is allowed to set and then broken into pieces and powdered. This powdered jaggery is mixed with whole wheat flour and more ghee and kneaded into a dough. Small lime-sized balls are made and flattened between the palms to shape it. The flattened discs are pierced with a fork and deep fried in ghee until golden and crackled.
