Kodo millet is an ancient millet grown for thousands of years in the arid regions of India. Compared to other small grains, kodo millets are larger in size, have a dark brown colored seed coat and are high in fiber and protein content. These gluten-free millets have a rich, earthy taste when cooked like rice. Nutritionally superior to rice and wheat, kodo millets are considered an excellent body cooling food in summers as per Ayurveda. Traditionally used to prepare nutritious porridges, rotis and puddings for babies and invalids, kodo millets are the best for digestion. Though underutilized today, they once sustained ancient grain-based Indian diets. With growing health consciousness, this hardy, drought-resistant grain is being revived for its higher nutrition.
