Description
Rasgulla is a spongy, syrupy ball-shaped dessert made from soft cheese curds and semolina dough. It originated in the eastern Indian state of Odisha. To make it, cheese curds are formed into a dough with semolina flour, suji or cornstarch. The dough is shaped into small balls and boiled in light sugar syrup. As the rasgulla boils, it expands and absorbs the sugary syrup, becoming fluffy and spongy. Once cooled, it develops a juicy, moist interior. Rasgullas are whitish in color with a smooth, bouncy texture. They have a sweet taste due to the sugar syrup. The curd gives it a tangy, mild cheesy flavor. They are traditionally served chilled as a dessert. Rasgullas are also popular additions to chaat street food dishes.
